A pot of vegetable curry

This tasty vegetable curry is jam packed with goodness and is great for meat-free Monday dinners (and it’s delicious for lunch the next day!) I buy my curry powder mix from Indian grocery stores. Make sure you store it in an air tight container.

Cut up any veg you have in the fridge/pantry. I love:
– cauliflower
– broccoli
– sweet potatoe
– potatoe
– green beans
– eggplant
– peas
– zucchini

Chop up and saute one onion with 2-3 cloves of garlic, in olive oil or coconut oil.
Sprinkle in 1 – 2 tablespoons of your fav curry powder blend 
After a minute add your veggies and mix well to coat in curry mixture
Add a tin of tomatoes or 4-5 fresh tomatoes
Rinse the tin and add water to the pot.
Season with salt and pepper
Simmer until the veggies are done.

Serve with rice, sliced banana, chutney and cucumber/tomato salad

Options: 
top with a dollop of full fat yoghurt
add a tin of rinsed chickpeas or a cup of lentils to up the fibre and protein content
